What is the difference between foie gras served in paper or vacuum packed?
In paper it is always a little better because it does not receive the pressure of the vacuum, although it must be cooked soon because otherwise it oxidises. With the vacuum we lose a little bit of quality but we make sure it doesn’t oxidise. So, if you plan to cook it immediately, it is better to cook it in paper, but if you plan to leave it in the fridge for a few days, then it is better to vacuum cook it.
Mi-cuit. Season with salt and pepper, marinate if desired, add your chosen ingredients for the occasion.
Wrap in several layers of cling film or vacuum and cook in water between 60º and 70º for approximately 40 minutes.
Leave it in the fridge for 24 hours before eating.
Its shelf life once cooked is 5/7 days wrapped in plastic wrap.
