Pedro Ximénez reduction, handmade in our workshop from Pedro Ximénez Alvear 1927, we only add sugar and reduce it over low heat until it reaches its perfect caramelized point and an exquisite texture, aroma and flavor.
It is especially recommended for foie gras cured in salt and preserve foie gras. With the help of a spoon, drizzle a little of the PX reduction over the foie gras.
Keep the bottle of PX reduction at room temperature.
