Carpier Salmon Tartare

Preparation:

The entire preparation process is carried out in an artisanal manner. In the cutting phase, the bones are removed by hand, one by one.

For this product, the parts of the upper part of the loin or the belly of the salmon are selected, and it is prepared in its natural state or with all kinds of marinades.

All the ingredients are selected to combine it with fried egg or egg yolk and thus taste an exquisite combination.

Recommendation:

Accompany the Salmon Tartar with a delicious mousseline.

Preparation: Add in a bowl an egg yolk, a few drops of lemon, 4 drops of Perrins, 3 drops of Tabasco, a teaspoon of Ketchup and stir while adding olive oil.

You will get a delicious mousseline that you can add to the tartar. Once everything is well stirred, you can add an oyster with its water and a few drops of dry sherry wine.
